Tigernut Carrot Bliss Balls

We’ve used Tigernut Flour instead of oats for grain free high fibre snacking. Tigernuts are small root vegetables or tubers and have a natural sweetness and chewy texture perfect for using in healthy bliss balls. We’ve also added some hormone balancing energising Maca and omega 3 rich Chia Seeds.

Ingredients

  • 1 cup Power Super Foods Tigernut Flour (or Flakes) (high fibre for blood sugar balance)
  • 1/2 cup walnuts (use pepitas if going nut free)
  • 15 Iranian dates (pre soaked for 20min & drained) Use less if using Medjool dates
  • 1/4 cup mixed dried fruit Eg Goji Berries, Goldenberries, sultanas
  • 1/2 cup freshly grated carrot
  • 2 Tbs Power Super Foods Chia Seeds (rich in omega 3 fatty acids)
  • 1 Tbs Power Super Foods raw Maca Powder (energising hormone balancing vegetable)
  • 1 Tbs brown rice syrup (or honey or maple)
  • 1 tsp cinnamon powder
  • 1 tsp vanilla powder or paste
  • 1/4 desiccated coconut for rolling

Directions

  1. Place all ingredients (except the coconut) into a food processor and blend until it becomes a dough

  2. Form the dough into balls about a tablespoon in size

  3. Roll each ball in the coconut

  4. Cover and refrigerate for a couple of hours to set a little then they are ready to eat

  5. * keep refrigerated and consume within a week
