1Β½ cups finely ground almond meal

1 scoop (approx. 30g) vanilla protein powder

Β½ teaspoon baking powder

Small pinch sea salt

1 large free-range egg

ΒΌ cup pure maple syrup

2 tablespoons natural peanut butter (or nut butter of choice)

2 tablespoons butter, melted and slightly cooled

1 teaspoon pure vanilla extract

Β½ cup dark chocolate chips or chunks

Heat oven to 180Β°C (fan-forced) and prepare a lined baking tray.

In a mixing bowl, combine almond meal, protein powder, baking powder and salt.

In a separate bowl, whisk together egg, maple syrup, nut butter, melted butter and vanilla.

Pour wet ingredients into the dry mixture and stir until a thick dough forms.

Gently fold through the chocolate chips. Cover and refrigerate for 30 minutes to firm up.

Roll dough into evenly sized balls, arrange on tray and lightly press down.

Bake for 10β12 minutes or until edges are lightly golden.
