Banana Bread Coconut Mookies

Ingredients:
- 2 ripe bananas
- 2 tablespoons cashew butter
- ¼ cup honey
- 2 teaspoons vanilla extract
- ⅓ cup extra-virgin olive oil
- ½ cup shredded coconut
- ½ cup tapioca flour
- 2 ½ cups Farmer Jo Maple Granola
Method:
- Preheat oven to 170℃ and line a large baking tray with baking paper.
- Add the banana to a large bowl and mash with a fork until pureed. Add in the cashew butter, honey, vanilla extract and olive oil and mix with a wooden spoon until well combined. Add in the remaining ingredients (coconut, tapioca flour and Farmer Jo Maple Granola) and mix to combine well into the mixture.
- Spoon up tablespoon amounts of the batter and place onto the prepared baking tray, spreading out slightly, until 1cm thick. Continue with the remaining batter.
- Place into the oven and bake for 20 minutes until golden brown.
- Remove from the oven and allow to cool for a few minutes before eating.
