Banana Bread Coconut Mookies

Cooking time: 20 minutes 


Ingredients:

  • 2 ripe bananas
  • 2 tablespoons cashew butter 
  • ¼ cup honey
  • 2 teaspoons vanilla extract 
  • ⅓ cup extra-virgin olive oil
  • ½ cup shredded coconut 
  • ½ cup tapioca flour 
  • 2 ½ cups Farmer Jo Maple Granola 


Method:

  1. Preheat oven to 170℃ and line a large baking tray with baking paper. 
  2. Add the banana to a large bowl and mash with a fork until pureed. Add in the cashew butter, honey, vanilla extract and olive oil and mix with a wooden spoon until well combined. Add in the remaining ingredients (coconut, tapioca flour and Farmer Jo Maple Granola) and mix to combine well into the mixture. 
  3. Spoon up tablespoon amounts of the batter and place onto the prepared baking tray, spreading out slightly, until 1cm thick. Continue with the remaining batter.
  4. Place into the oven and bake for 20 minutes until golden brown. 
  5. Remove from the oven and allow to cool for a few minutes before eating.
