Blueberry and Banana Muffins Recipe
This recipe is for a delicious and healthy Blueberry and Banana Muffin that uses oat flour, mashed bananas, maple syrup, frozen blueberries, vanilla whey protein powder, vanilla extract, baking powder and almond milk as the main ingredients.
INGREDIENTS
- 1.5 cup oat flour
- 2 eggs
- 2 bananas, mashed
- ¼ cup maple syrup
- 1 cup blueberries, frozen
- 2 scoops Happy Way Vanilla Whey Protein Powder
- 1 tbsp vanilla extract
- 1 tsp baking powder
- 1 cup almond milk
METHOD
- Preheat oven to 180°C and line a muffin tray with muffin cases.
- In a mixing bowl, add all ingredients (except blueberries) and mix well.
- Gently fold the blueberries into the mixture.
- Pour the mixture into the muffin cases.
- Bake for 15-20 minutes or until golden—enjoy!
