Ingredients

¼ cup honey

1 teaspoon vanilla extract

1 tablespoon water

Pinch of sea salt

½ cup pumpkin seeds

½ cup sunflower seeds

¼ cup Hemp Foods Australia Organic Hulled Hemp Seeds

½ cup almonds, roughly chopped (optional)

½ cup cashews, roughly chopped (optional)

¼ cup desiccated coconut

¼ cup coconut oil, melted

1 block dark chocolate, melted

Extra desiccated coconut for topping

Pinch of sea salt for finishing

Culinary lavender, optional
Method

Preheat the oven to 150°C and lightly grease a muffin tray.

In a large bowl, combine the honey, vanilla, water, sea salt, desiccated coconut and melted coconut oil.

Add the pumpkin seeds, sunflower seeds, hulled hemp seeds, almonds and cashews. Stir until everything is evenly coated.

Spoon the mixture into the muffin tray and gently press each portion together to help the clusters hold their shape.

Bake for 10–15 minutes, or until lightly golden around the edges.

Allow the clusters to cool completely before carefully removing them from the tray.

Melt the dark chocolate, then dip the base of each cluster into the chocolate.

Finish with a sprinkle of desiccated coconut, a tiny pinch of sea salt and culinary lavender if using.
