Vanilla Protein Pancakes with Choc-Tahini Sauce

Deliciously sweet, fluffy and golden brown – these Vanilla Protein Pancakes are a winner!

And they're healthy too! Packed with more than 20g of plant protein thanks to our Raw Protein Isolate, they're super versatile and be topped with anything you like – berries, banana, maple syrup, ice-cream or – our personal favourite – this decadent Choc-Tahini Sauce.

Made from only 4 ingredients, it’s super simple to whip up while your pancakes are cooking. It features antioxidant- and iron-rich cacao as well as hulled tahini, a tasty paste made from sesame seeds. It's a solid source of protein, fibre, monounsaturated fats and Vitamins B1 and B2 (no, we're not talking about the Bananas in Pyjamas).

Note: These pancakes are best enjoyed in bed with a good book and a fresh cup of coffee. Ahhh.

Ingredients

  • 2 tbsp Raw Protein Isolate Vanilla

  • ¹/₂ heaped cup buckwheat flour

  • ¹/₂ tsp baking powder

  • 1 tsp vanilla bean powder

  • 1 tbsp mesquite powder (optional)

  • 2 organic eggs, separated (or 2 flax eggs if vegan)

  • 1 ripe banana, mashed

  • ¹/₄ cup raw cashews

  • ³/₄ cup filtered water

  • 4 medjool dates

  • 1 tbsp hulled tahini

  • ¹/₄ tsp himalayan salt

Choc-Tahini Sauce

  • 2 tbsp cacao powder

  • 1 tbsp hulled tahini

  • 1 tbsp coconut nectar

  • Boiling water (add until desired consistency is reached)

Directions

  1. To make Choc-Tahini Sauce, combine all sauce ingredients in a small bowl and mix until smooth, set aside

  2. Combine all dry pancake ingredients in a mixing bowl, mix well

  3. Place remaining ingredients (except egg whites) in a blender, blend until smooth

  4. Add to dry mixture, mixing well

  5. Beat egg whites until firm peaks form and then gently fold into the pancake mixture

  6. Place coconut oil in a non-stick pan and allow to melt over low-medium heat

  7. Add a small amount of the pancake mixture and leave to cook for 1-2 minutes (or until bubbles start to form)

  8. Flip and allow the other side to cook for another minute or so

  9. Repeat this process for the rest of the mixture

  10. Serve with a drizzle of choc-tahini sauce and your choice of fruit
