
White Choc Raspberry Protein Cookies
These soft and chewy cookies combine the richness of white chocolate with the tangy sweetness of raspberries, all while packing a protein boost! Perfect for a post-workout treat or a guilt-free indulgence.
Ingredients
- 2 eggs
- 170g peanut or almond butter
- 80g caster sugar
- 1 tsp vanilla extract
- 50g Happy Way White Choc Raspberry or Vanilla Whey Protein Powder
- 105g plain flour
- ½ tsp bicarb soda
- Pinch of sea salt
- 90g white chocolate chips
- 90g frozen raspberries
Method
- Preheat oven to 170°C and line a baking tray with parchment paper.
- In a large bowl, whisk together eggs, sugar, nut butter, and vanilla until smooth.
- Stir in protein powder, flour, bicarb soda, and salt until combined.
- Gently fold in chocolate chips and frozen raspberries.
- Scoop dough into balls and place on the baking tray, leaving space for spreading.
- Bake for 9-10 minutes until golden.
- Let cool for 15 minutes, then enjoy!
