Not Coffee is an Australian caffeine-free beverage brand founded by Sila Gatti after Graves' disease and a practitioner-guided dietary change required her to give up coffee, tea, decaf and other stimulants. Although the caffeine craving passed, Sila missed the aroma, preparation and comfort of the daily coffee ritual and found existing substitutes either tasted unlike coffee or relied on sugar, additives or stimulants. Its point of difference came from formulating for the entire ritual rather than simply removing caffeine: she repeatedly roasted, ground, blended and brewed ingredients until the drink could look, behave and taste recognisably coffee-like.
