Not Coffee is an Australian caffeine-free beverage brand founded by Sila Gatti after Graves' disease and a practitioner-guided dietary change required her to give up coffee, tea, decaf and other stimulants. Although the caffeine craving passed, Sila missed the aroma, preparation and comfort of the daily coffee ritual and found existing substitutes either tasted unlike coffee or relied on sugar, additives or stimulants.
