  • 2 tablespoons Low Carb Sugar-free Icing Mix

  •  Approx. 1-2 tablespoons of hot or boiled water

Directions


  1. Preheat the oven to 160°C and lightly grease a muffin tin with a spray of oil or melted butter. Or use a lined muffin tin or silicone tray.

  2. Combine the Pancake Mix with the eggs and milk to make a pancake batter.

  3. Separately, melt the butter in the microwave and stir in the cinnamon and 2 tablespoons of the Icing Mix.

  4. Spoon 1 tablespoon of Pancake Mix into each muffin case, then add a 1 teaspoon dollop of the cinnamon mix. Repeat once more with one more tablespoon of pancake mix and one more teaspoon of the cinnamon mix.

  5. With a small knife, swirl the mix (don’t worry too much, it doesn’t have to be a perfect swirl!)

  6. Place in the oven for 15 minutes until risen and cooked through.

  7. In the meantime, make the topping by combining the Low Carb Icing with hot water. Add the water slowly until you reach a drizzle consistency. You’ll need no more than 2 tablespoons of water.

  8. Take the scrolls out of the muffin tin and allow to cool slightly on a rack.

  9. Drizzle the tops with the icing mix.
