Vanilla Biscoff Protein Loaf

A deliciously spiced, protein-packed treat that’s soft, sweet, and utterly irresistible! Made with our Vanilla Buttercream Almond Protein for an extra boost of yum.

Ingredients

Dry Ingredients:

  • 200g Gluten-Free Self-Raising Flour
  • 70g Vanilla Protein Powder
  • 40g Sweetener
  • ½ tsp Ground Cinnamon
  • ½ tsp Ground Ginger
  • ½ tsp Baking Powder

Wet Ingredients:

  • 225g Overripe Bananas (mashed)
  • 200ml Unsweetened Almond Milk
  • 50g Coconut Yoghurt
  • 1 tsp Vanilla Extract

Topping:

  • 4 Biscoff Caramelised Biscuits

Method

  1. Preheat your fan-forced oven to 180°C.
  2. In a large bowl, sift together all dry ingredients.
  3. Mash the bananas in a separate bowl and mix with the wet ingredients.
  4. Fold the wet mixture into the dry ingredients until well combined.
  5. Pour the batter into a silicone baking tray and smooth the top.
  6. Place the Biscoff biscuits on top and bake for 30-40 minutes, or until cooked through.
  7. Let it cool, then store:
    • Airtight container: 2-3 days
    • Fridge: 3-4 days
    • Freezer: Up to 3 months
