A Jammy Twist on a Classic ANZAC
Thought our new biscuits were tasty? Wait until you try this fun, jam-filled take on the traditional ANZAC biscuit. Buttery, golden, and filled with your favourite jam — they’re nostalgic, delicious, and just the right amount of gooey in the centre.
Here’s how to make them:
INGREDIENTS:
-
ANZAC Biscuit Pre-Mix
-
100g golden syrup
-
125g butter or 80g Nuttlex
-
1 Tbsp water
-
Jam of your choice
METHOD:
-
Preheat oven to 160°C and line 2–3 trays with baking paper.
-
Pour the ANZAC pre-mix into a large mixing bowl.
-
In a saucepan over medium heat (or microwave for 2 mins), melt butter, golden syrup and water together until smooth.
-
Add the wet mix to the dry ingredients and stir until fully combined. Dough should hold when rolled into a ball — if it’s too dry, add water 1 tsp at a time.
-
Roll tablespoon-sized balls and place on trays about 5cm apart.
-
Press a small well into the centre of each ball and spoon in a little jam.
-
Bake for 12–15 minutes for chewy cookies, or 17–20 minutes if you prefer them crunchy.
Get ready for sticky fingers and happy smiles 😍
