Acai Overnight Oats

Overnight oats are great for days where you don’t have much time to prepare breakfast but you still want to get in your morning hit of nutrients. This recipe by Healthy Luxe is a perfect mix of healthy fats and protein from coconut milk, chia seeds, coconut yoghurt, wholegrain carbs from gluten free rolled oats, and sweetness from apple, cinnamon and frozen berries.

  • 1 cup organic gluten free oats

  • 1 cup coconut milk

  • 1 tbsp chia seeds

  • ¼ cup coconut yogurt

  • 2 tbsp Raw Acai Freeze Dried Powder

  • 1 apple, shredded

  • ½ cup mixed frozen berries

  • ½ tsp cinnamon


  1. Combine all ingredients in a mixing bowl and gently mix.

  2. Divide mixture between two jars and place in the fridge overnight.

  3. Serve with additional berries, coconut yogurt and / or shredded coconut.
