Ingredients
- 2 tbsp olive oil\
- 2 tbsp Mingle Chilli & Lime seasoning
- Salt to season
- 1 brown onion, finely chopped
- 2–3 cups raw or canned corn
- 2 garlic cloves, chopped
- 170g cream cheese
- ⅓ cup sour cream
- 4 tbsp butter
Toppings
⅓ cup Greek yoghurt or light mayo
2 tbsp lime juice
¼ bunch fresh coriander, chopped
Corn chips to serve
Directions
Heat the olive oil in a frying pan over medium-high heat. Add the onion and cook for about 5 minutes or until soft.
Add the corn, garlic, 1 tsp of Mingle Chilli & Lime seasoning, and season with salt and pepper. Cook for another 5 minutes until the corn softens.
Reduce the heat and stir in the cream cheese until melted and creamy. Mix through the sour cream.
In a separate frying pan, melt the butter until golden. Stir in the remaining Mingle seasoning and a little extra salt. Cook for another minute, then remove from heat.
In a small bowl, mix the Greek yoghurt or light mayo with lime juice and a pinch of salt.
Spoon your dip into a bowl and top with grilled corn, the yoghurt drizzle, spicy butter, and coriander.
Serve with plenty of corn chips and enjoy!
