Chocolate chip brioche

Ingredients:
- 440 g of flour
- 50 g of sugar
- 10 g of baker's yeast
- 120 g of warm milk
- 3 eggs
- Vanilla
- 4 g of salt
- 120 g of softened butter
- Chocolate chips
For the glaze:

Preparation:
In the bowl of a stand mixer, combine the flour, sugar, and baker's yeast. Mix well. Add the warm milk and mix again, then add the eggs and vanilla. Add the salt and the softened butter, cut into pieces. Mix for 15 minutes. Allow the dough to rise at room temperature until it doubles in size. While the dough is rising, prepare a loaf pan by greasing and flouring it (to facilitate unmolding). Once the brioche dough has doubled in size, deflate it and divide it into 8 equal-sized balls (approximately 110 g each). Note: This quantity is for 2 loaf pans, with 4 balls in each. Add the chocolate chips to the dough. Take the first ball and roll it out with a rolling pin to obtain a rectangular shape. Place a square of chocolate on it and fold the left side of the rectangle to the center, then fold the right side over the first fold. You will have a smaller rectangle, which you will roll up to form a log. Place it in the loaf pan and repeat with the other 3 balls. Let it rise for 30 minutes. Prepare the glaze by mixing the egg yolk with the cream. Allow it to rise until it doubles in size, then brush it with the glaze using a brush. Bake the brioche at 180°C (350°F) until it is nicely browned, for about 30 minutes. Once out of the oven, brush a light syrup over the top.
