Christmas Mince Pies

Delicious vegan fruit mince pies with a healthy superfoods twist.   1. Combine all ingredients in a large saucepan and simmer for 20-30 minutes, stirring every few minutes. Add more water if the mixture starts to stick to the saucepan.

  2. Allow to cool for 10-15 minutes.

  3. Spoon a small amount of the mince into the pastry cases.

  4. Top with desiccated coconut and toasted flaked almonds.

  5. Decorate with star anise (optional).

  6. Serve and enjoy.
