This recipe is great because it can be made in one bowl! Combine your dry ingredients before whisking in your wet ingredients. Pour into a greased loaf tin and bake for 50 minutes until golden brown. Serve with coconut yogurt and enjoy! 

INGREDIENTS

  • 1 1/2 cups all-purpose flour (choose gluten free if required)

  • 2 tbsp Raw Beauty Collagen Glow Unflavoured

  • 1 tbsp poppy seeds

  • 2 tsp baking powder

  • 1/3 cup melted butter or coconut oil

  • 3/4 cup coconut sugar

  • 3 organic eggs (or vegan egg replacer)

  • 1/2 cup lemon juice

  • 1 tbsp lemon zest, finely grated

  • 1/4 cup oat milk

DIRECTIONS

  1. Preheat oven to 180 Degrees C.

  2. Combine flour, collagen, poppy seeds, and baking powder in a mixing bowl, gently mix.

  3. Add melted butter, sugar, eggs, lemon juice/zest and oat milk. Whisk to combine.

  4. Grease and line a small loaf tin and spoon in the mixture.

  5. Bake for 50 minutes.

  6. Serve with coconut yoghurt.
