1 tsp vanilla extract

120ml olive oil

150g caster sugar

Zest and juice of 2 lemons

1 tbsp poppy seeds

180g plain flour

60g Vanilla Protein Powder

3 tsp baking powder

Pinch of salt

120ml milk of choice

Preheat your oven to 180°C and line a muffin tin with 12 muffin liners.

In a large bowl, whisk together the egg, vanilla extract, olive oil, caster sugar, lemon zest, and lemon juice until smooth and well combined.

In a separate bowl, mix the flour, vanilla protein powder, baking powder, salt, and poppy seeds.

Gradually add the dry ingredients into the wet mixture, stirring gently to combine.

Pour in the milk and mix until the batter is just combined—don’t overmix!

Evenly divide the batter between the muffin liners, filling each about ¾ full.

Bake for 15–17 minutes or until lightly golden and a toothpick comes out clean.

Let cool in the tin for 5 minutes before transferring to a wire rack.
