Nori Sushi Bowl
A beautiful, nourishing and delicious option for having sushi at home, this light and bright deconstructed sushi bowl replaces rolled fried seaweed sheets with dried raw wild organic Nori Flakes sprinkled over fish (or tofu), rice and colourful veggies. Easy to adapt to your liking, it’s a dish that will please everyone.
Ingredients
- Pickled Onion
- ½ red onion, thinly sliced
- 1 tbsp rice vinegar
- Salmon (alternatively use Tofu)
- 2 salmon fillets, skin removed and cut into cubes
- 2 garlic cloves
- 1 tbsp soy sauce (or tamari)
- 1 tsp sesame seeds
- 1 tsp sesame oil
- ½ tsp Power Super Foods Coconut Sugar
- Rice
- 2 tsp rice vinegar
- 1 tsp Power Super Foods Coconut Sugar
- Pinch of salt & pepper
- 1 cup cooked white rice
- Toppings
- ½ avocado, sliced
- ½ cup edamame beans
- 1 Lebanese cucumber, sliced
- 1 carrot, peeled into ribbons
- ¼ tsp sesame seeds
- 2 tsp Power Super Foods Nori Flakes

Directions
Place red onion and rice vinegar in a small bowl and set aside, allowing to pickle.
Combine salmon, garlic, soy sauce, sesame seeds, sesame oil and coconut sugar in a bowl.
Drizzle a small frying pan with oil and bring to a medium heat.
Add salmon or Tofu, cooked to your liking.
Meanwhile, combine rice vinegar, coconut sugar salt and pepper in a small bowl.
Pour over cooked rice and stir to coat.
Place rice in a bowl and top with avocado, edamame beans, cucumber, carrot, sesame seeds, Nori Flakes, siracha and mayonnaise. Add pickled red onion and cooked salmon.
