📝 Ingredients
For the Balls:

½ cup dates, soaked in boiling water for 5–10 mins, then drained

½ cup rolled oats

¼ cup almond meal

⅓ cup natural peanut butter (we love the crunchy kind!)

1 serve (30g) WPI vanilla protein powder

2 tbsp coconut oil

2 tbsp maple syrup

¼ tsp salt
For the Chocolate Coating:

150g dark chocolate

2 tbsp coconut oil
👩🍳 Method
1. Blend the mix
Add the soaked dates, oats, almond meal, peanut butter, protein powder, coconut oil, maple syrup, and salt to a food processor. Blitz until a sticky, cohesive dough forms. You should be able to pinch the mixture together easily. Taste and adjust sweetness with an extra drizzle of maple syrup if you like.
2. Roll & chill
Scoop out portions of the dough and roll into 12 evenly sized balls. Place them on a tray lined with baking paper and freeze for 1–2 hours, or until firm. This helps them hold their shape when dipped in chocolate.
3. Melt the chocolate
In a microwave-safe bowl, combine the dark chocolate and coconut oil. Microwave in 20–30 second bursts, stirring each time, until smooth and glossy.
4. Dip & set
Using a fork or skewer, dip each chilled ball into the melted chocolate, allowing any excess to drip off. Place back on the lined tray. For extra indulgence, repeat for a double coating or drizzle more chocolate on top. Return to the fridge or freezer to set.
5. Store & snack
Keep your finished protein balls in an airtight container in the fridge for up to a week, or in the freezer for longer-term snacking. If frozen, let them sit at room temp for 15–20 minutes before enjoying.
💡 Tip: Want to mix it up? Swap the peanut butter for almond or cashew butter, or roll your balls in crushed nuts or shredded coconut after dipping in chocolate!
