Peanut Butter & Jelly Biscuits with Rolled Oats
Ingredients
- ¾ cup gluten-free rolled oats (or regular rolled oats if not GF)
- ¾ cup gluten-free flour blend
- ½ cup Botanika Blends Peanut Butter Protein Powder
- ¼ cup coconut sugar (or your preferred sweetener)
- ½ tsp baking soda
- ¼ tsp salt
- ¼ cup natural peanut butter
- ¼ cup coconut oil, melted
- 2 tbsp plant-based yoghurt
- 2-3 tbsp plant-based milk (as needed)
- ¼ cup jelly/jam (strawberry, raspberry, or your favorite flavor)

Preheat & Prepare
Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper. -
Prepare Oats
Blend half of the rolled oats into a coarse oat flour (optional for texture variety). Leave the other half as-is for added chewiness. -
Mix Dry Ingredients
In a bowl, combine the rolled oats, oat flour (if using), gluten-free flour, Botanika Blends Peanut Butter Protein Powder, coconut sugar, baking soda, and salt. -
Combine Wet Ingredients
In another bowl, whisk together the peanut butter, melted coconut oil, and plant-based yoghurt until smooth. Add plant-based milk gradually until the mixture is well combined. -
Form the Dough
Stir the wet ingredients into the dry mixture until a dough forms. The oats will absorb some moisture, so adjust with a bit more plant-based milk if needed. -
Shape Biscuits
Roll dough into balls (about 1 tablespoon each) and place them on the baking tray. Flatten slightly and create an indent in the center for the jelly. -
Add Jelly
Fill each indent with a small dollop of jelly or jam. -
Bake
Bake for 12-15 minutes or until golden brown on the edges. -
Cool & Serve
Allow the biscuits to cool completely on a wire rack before serving
Additional Ingredients for the Cream Filling
- 2 tbsp natural peanut butter
- 2 tbsp vegan cream cheese (or coconut cream for a lighter option)
- 1-2 tbsp maple syrup (or your preferred sweetener)
- ½ tsp vanilla extract

In a small bowl, whisk together the peanut butter, vegan cream cheese (or coconut cream), maple syrup, and vanilla extract until smooth and fluffy. -
Assemble the Biscuits
- Once the biscuits are completely cooled, take one biscuit and spread a generous layer of the peanut butter cream on the flat side.
- Add a small dollop of jelly on top of the cream for an extra burst of flavor.
- Place a second biscuit on top, flat side down, to create a sandwich.

For a firmer texture, refrigerate the assembled sandwich biscuits for 15-20 minutes to let the filling set. -
