Peanut Caramel Bar Cookies

INGREDIENTS (makes a big batch! Half for not so many)
- 170 grams vegan butter, softened
- 300 grams light brown sugar
- 44g granulated sugar
- 90 ml plant-based milk
- 3 tsp vanilla extract
- 360 grams plain flour
- 1.5 tsp baking soda
- ½ tsp salt
- 180g vegan chocolate chips
TOPPINGS
- peanuts
- Peanut butter

- Melted chocolate for drizzling
METHOD
- Cream butter and sugar in a bowl. Don’t over beat.
- Add vanilla extract and milk. Mix until combined
- Add flour, salt and baking powder. Mix until dough forms with no dry patches
- Add in your chocolate chips/chunks and mix until evenly distributed
- Cover bowl and pop in fridge for half an hour
- Preheat oven to 160 (fan) and line baking trays with baking paper
- Remove dough from fridge
- Separate the dough into tbsp sized balls and place on a baking tray. Ensure dough balls are nicely spread out
- Bake for 9 minutes until the edges are just about going golden. They may look undercooked when you remove them from the oven but leave to cool on a baking tray for 5mins before moving to the cooling rack and they’ll firm up nicely!
- Finish with peanuts, peanut butter, melted chocolate and of course LoveRaw Peanut Caramel Bars!
