Ingredients
Base:
-
1 cup almond meal
-
1 cup Hemp Foods Australia Natural Protein Powder
-
1/2 cup almond butter
-
1/4 cup plant-based milk
-
2 tbsp maple syrup
Caramel Layer:
-
3/4 cup smooth peanut butter
-
1/4 cup maple syrup
-
1/4 cup coconut oil
-
1 tsp vanilla extract
Chocolate Coating:
-
200g dark chocolate
-
1 tbsp coconut oil
Method
-
Prep: Line a brownie pan with parchment paper.
-
Base: In a bowl, combine all base ingredients and mix until a dough forms. Press into your lined pan and place in the freezer.
-
Caramel: In a small saucepan over low-medium heat, stir together peanut butter, maple syrup, coconut oil, and vanilla. Heat until it begins to bubble gently. Remove from heat and let cool slightly.
-
Assemble: Pour caramel evenly over the base. Freeze for 30–60 minutes, or until fully set.
-
Coat: Melt the dark chocolate with coconut oil using a double boiler or microwave in short bursts. Slice your bars, then dip each one in melted chocolate. Double dip if you're feeling fancy.
-
Finish: Let chocolate set in the fridge or freezer for a few minutes. Sprinkle with flaky sea salt for the ultimate finish.
Tip: Store in an airtight container in the fridge for up to a week or freeze for longer shelf life (but let’s be real—they won’t last that long!).
