Ingredients

Base:

  • 1 cup almond meal

  • 1 cup Hemp Foods Australia Natural Protein Powder

  • 1/2 cup almond butter

  • 1/4 cup plant-based milk

  • 2 tbsp maple syrup

Caramel Layer:

  • 3/4 cup smooth peanut butter

  • 1/4 cup maple syrup

  • 1/4 cup coconut oil

  • 1 tsp vanilla extract

Chocolate Coating:

  • 200g dark chocolate

  • 1 tbsp coconut oil


Method

  1. Prep: Line a brownie pan with parchment paper.

  2. Base: In a bowl, combine all base ingredients and mix until a dough forms. Press into your lined pan and place in the freezer.

  3. Caramel: In a small saucepan over low-medium heat, stir together peanut butter, maple syrup, coconut oil, and vanilla. Heat until it begins to bubble gently. Remove from heat and let cool slightly.

  4. Assemble: Pour caramel evenly over the base. Freeze for 30–60 minutes, or until fully set.

  5. Coat: Melt the dark chocolate with coconut oil using a double boiler or microwave in short bursts. Slice your bars, then dip each one in melted chocolate. Double dip if you're feeling fancy.

  6. Finish: Let chocolate set in the fridge or freezer for a few minutes. Sprinkle with flaky sea salt for the ultimate finish.


Tip: Store in an airtight container in the fridge for up to a week or freeze for longer shelf life (but let’s be real—they won’t last that long!).
