This slice is super easy to make (no oven needed!), and it keeps well in the fridge or freezer — perfect for prepping ahead. Plus, it’s naturally gluten-free and can be made dairy-free depending on your choice of protein and milk.


✨ Ingredients:

  • 2 ½ cups puffed rice

  • 2 cups shredded coconut

  • ½ cup Happy Way Top Of The Choc Whey Protein Powder

  • ¾ cup nut butter (peanut, almond, cashew — your call!)

  • ½ cup coconut oil

  • ¼ cup almond milk (adjust as needed)


🥣 Method:

  1. Combine the dry ingredients:
    In a large mixing bowl, add the puffed rice, shredded coconut, and protein powder. Stir to evenly distribute everything.

  2. Melt the wet mix:
    In a separate microwave-safe bowl, combine the nut butter and coconut oil. Heat in the microwave for about 30 seconds, or until just melted and smooth. Stir to fully combine.

  3. Mix it all together:
    Pour the wet mixture into the dry ingredients. Stir well until everything is evenly coated. Slowly add the almond milk a little at a time to help bring the mixture together — you want it sticky enough to press into a slice, but not soggy. You may need a little more or less than ¼ cup depending on the texture of your nut butter.

  4. Set and slice:
    Press the mixture firmly into a lined baking tray or container. Smooth the top with the back of a spoon. Place in the fridge for 2–3 hours or in the freezer for about 1 hour until set.

  5. Slice and snack:
    Once firm, remove from the tray and slice into bars or squares. Store in an airtight container in the fridge for up to a week (or in the freezer for longer-lasting snacks).


🔁 Variations:

  • Swap almond milk for oat or soy.

  • Add a handful of cacao nibs or dark choc chips for extra indulgence.

  • Drizzle melted dark chocolate on top before chilling for a snazzy finish.
