Spring-inspired Satay Chicken Vermicelli Salad

Ingredients:
- 1 pack of vermicelli noodles
- 1 chicken breast, thinly sliced
- ½ sachet of Mingle’s Satay Recipe Base
- Ready-made coleslaw mix
- 1 carrot, thinly sliced
- 1 Lebanese cucumber, thinly sliced
- 2 sprigs of spring onion, thinly sliced
- 1/2 red onion, thinly sliced
- 1/2 fresh lime
- 1/2 avocado, sliced
- Fresh coriander, chopped
Satay Dressing Ingredients:
- ½ sachet of Mingle's Satay Recipe Base
- 1/4 cup peanut butter
- 2.5 tbsp water (with an option to add more for desired consistency)
- Juice of 1/2 fresh lime
- 1 tbsp soy sauce
- 1/2 tsp organic minced ginger
- 2 tsp chili oil
Directions:
1. Sharpen those chopping skills and prep all your veggies. Set them aside for the grand assembly.
2. Let your vermicelli noodles soak in some hot water until they soften and dance.
3. Coat your chicken slices in half of Mingle’s Satay sachet and a dash (2 tbsp) of soy sauce. Then air fry them at 200 degrees for 10-15 minutes until they're cooked to perfection.
4. For the satay dressing, combine all the dressing ingredients in a bowl and mix until smooth and tempting.
5. Time for the big mingle! Toss in all your prepped ingredients into a bowl. Drizzle that tantalizing satay dressing on top, give it a fresh lime squeeze, and finally, sprinkle with coriander to make it truly unforgettable.
