Superfood Pancakes

The prettiest Sunday breakfast that also happens to be full of the good stuff. With Gelatinised Maca (for easy digestion and extra toasty butterscotch flavours) and Beetroot Powder (for colour and nutrients), this stack will keep you powering right through Sunday and into a new week.

Ingredients
2 cups of plain flour (or sub gluten free flour)
2 tablespoons of Power Super Foods Gelatinised Maca
4 tbs Power Super Foods Coconut Sugar to taste
2 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
2 cups of almond milk
2 tbsp apple cider vinegar
Pinch of Himalayan Salt
2 teaspoons Beetroot Powder for coloured pancakes

Method
Stir the wet ingredients and set aside for 5 minutes
Mix together all the dry ingredients except Beetroot Powder
Pour wet mixture into dry mixture until a smooth batter forms
Make 3 initial pancakes by pouring 1/2 cup of batter onto a non stick pan and cook on low heat until golden - about 1 minute on each side.
Add 1/2 teaspoon of Power Super Foods beetroot powder to batter, mixing it well and continue making 2 pancakes before adding an extra 1/2 tsp of beetroot powder for another set of pancakes and continue adding 1/2 tsp of beetroot powder to the batter to get a deeper shade of red.
Enjoy with fresh raspberries, white chocolate and maple syrup drizzled on top.
