
Tigernut Breakfast Choc Chip Cookies

Start the day right with these grab-and-go tigernut breakfast cookies! They’re healthy enough for breakfast or a snack but indulgent enough for dessert. Naturally gluten-free and loaded with protein and fibre, they’re a delicious way to power up your morning. For the (optional but highly recommended!) chocolate chips, go for chopped ceremonial cacao paste or dark chocolate if you want a touch of sweetness.
Ingredients

3 ripe bananas

1 Tbsp brown rice syrup

½ cup almond butter

1 cup tigernut flour

1 cup almond meal

¼ cup hemp seeds

¼ cup Power Super Foods Cacao Nibs or Cacao Crunch

¼ cup chopped Power Super Foods Cacao Paste or dark chocolate pieces
Directions

Preheat oven to 180°C.

Mash bananas in a large bowl, then mix in brown rice syrup and almond butter until smooth.

Stir in tigernut flour and almond meal; mix well.

Fold in hemp seeds, cacao nibs, and chopped chocolate.

Roll mixture into balls, place on a lined baking tray, and gently flatten with your hands or a spoon.

Bake for 15–20 minutes, or until lightly golden.

Let cool for 5 minutes — then enjoy!
