Tigernut Breakfast Choc Chip Cookies

Start the day right with these grab-and-go tigernut breakfast cookies! They’re healthy enough for breakfast or a snack but indulgent enough for dessert. Naturally gluten-free and loaded with protein and fibre, they’re a delicious way to power up your morning. For the (optional but highly recommended!) chocolate chips, go for chopped ceremonial cacao paste or dark chocolate if you want a touch of sweetness.


Ingredients

  • 3 ripe bananas

  • 1 Tbsp brown rice syrup

  • ½ cup almond butter

  • 1 cup tigernut flour

Add To Cart:

  • 1 cup almond meal

  • ¼ cup hemp seeds

  • ¼ cup Power Super Foods Cacao Nibs or Cacao Crunch

  • ¼ cup chopped Power Super Foods Cacao Paste or dark chocolate pieces


Directions

  1. Preheat oven to 180°C.

  2. Mash bananas in a large bowl, then mix in brown rice syrup and almond butter until smooth.

  3. Stir in tigernut flour and almond meal; mix well.

  4. Fold in hemp seeds, cacao nibs, and chopped chocolate.

  5. Roll mixture into balls, place on a lined baking tray, and gently flatten with your hands or a spoon.

  6. Bake for 15–20 minutes, or until lightly golden.

  7. Let cool for 5 minutes — then enjoy!

Tip: Store in an airtight container in the fridge or freezer for a quick grab-and-go treat anytime.
