Zucchini, Mint & Quinoa Fritters

GLUTEN FREE  |  VEGAN | Serves 4

 

ingredients

  • 2 cups grated zuchini, squeezed to drain excess water
  • 1/2 cup sliced shallots
  • 2 tbls chopped mint
  • 1/2 cup cooked quinoa (leftovers are the best)
  • Plantasy Savoury Egg Mix

 

method

Make 1 cup of egg mix as per the packet instructions. Stir in the remaining ingredients.

Heat a non-stick fry pan. Dollop the mixture into the pan to make 10cm round fritters. Cook till golden on both sides.

Serve warm with your favorite relish or chutney.
