Zucchini, Mint & Quinoa Fritters
GLUTEN FREE | VEGAN | Serves 4
ingredients
- 2 cups grated zuchini, squeezed to drain excess water
- 1/2 cup sliced shallots
- 2 tbls chopped mint
- 1/2 cup cooked quinoa (leftovers are the best)
- Plantasy Savoury Egg Mix
method
Make 1 cup of egg mix as per the packet instructions. Stir in the remaining ingredients.
Heat a non-stick fry pan. Dollop the mixture into the pan to make 10cm round fritters. Cook till golden on both sides.
Serve warm with your favorite relish or chutney.
