Superfood Mix‑Ins

Pancakes Base

  • ½ cup flour (you can use buckwheat/oat mix or your favourite GF option)

  • ½ cup almond milk

  • 1 tsp vanilla extract

  • ½ tsp baking soda

  • ½ tsp apple cider vinegar

  • Pinch of salt

Salted Toffee Sauce

  • 1 Tbsp peanut flour or peanut butter

  • 1 Tbsp maple syrup or rice malt syrup

  • Pinch of salt

  • Almond milk (to thin)

Toppings

  • Banana slices, crushed pistachios, and extra Cacao Nibs if you like a crunch!


👩🍳 Method

1. Make the Pancake Batter
In a bowl combine the flour, cacao powder, maca powder, coconut sugar, baking soda and salt.
Add almond milk, vanilla extract, and apple cider vinegar. Whisk until smooth.

2. Cook the Pancakes
Heat a non‑stick pan over medium heat with a little coconut oil. Pour batter (about ¼ cup per pancake). Cook until bubbles form and edges look set, then flip and cook the other side. Repeat.

3. Make the Salted Toffee Sauce
In a bowl mix peanut flour (or peanut butter), maple syrup, salt and enough almond milk to reach a pourable consistency. Whisk until smooth.

4. Serve
Stack pancakes, drizzle with sauce, and scatter banana slices, pistachios and cacao nibs on top.
