Makes 6 Mini Cakes
📝 Base
✅ 1/2 cup raw hazelnuts
✅ 1/4 cup raw almonds
✅ 8 x large medjool dates (soaked 10 minutes)
✅ 2 TBS raw cacao powder
✅ Pinch sea salt
📝 Chocolate layer
✅ 1 cup raw cashews (soaked for 4 hours)
✅ 2 scoops @macr0mike Chocolate Hazelnut Almond Protein
✅ 1/2 cup rice malt syrup
✅ 1 cup coconut cream (chilled part from the can)
✅ 1/4 cup melted cacao butter
✅ 1/4 cup raw cacao powder
✅ 1 tsp vanilla
✅ Pinch salt
📝Topping
✅ 100g vegan chocolate - I used loving_earth
✅ Chopped hazelnuts
👩‍🍳 Method:
1. Blend your nuts and salt in a food processor until it forms a biscuit crumble. Add your dates and blend until the mixture forms a soft dough. Add a tablespoon of water if required. Transfer your mixture to a mini silicone mould and press down evenly, it should go a 1/3 of the way up the mould.
2. Place in the fridge to set while you make your filling. Place ingredients into a vitamix or a high-speed food processor. Blend the mixture on a high speed until it is smooth and creamy, scraping down the sides of the bowl occasionally.
3. Transfer the mixture into your 6 x moulds, if you have any leftover mixture, you can use this as a topping for your cakes. Place the mixture flat in the freezer and set overnight or for 4 hours until set.
4. When set, pop out of the moulds and top with melted chocolate, extra chocolate mixture, mini chocolate bars and chopped hazelnuts.
5. Allow to thaw for 10 minutes before eating. Enjoy!
