Hazelnut Protein Cheesecakes

These no bake treats are super easy to make! They are refined sugar free, gluten free and packed with protein using our Chocolate Hazelnut Almond Protein!💪🤤

Makes 6 Mini Cakes⁠
📝 Base⁠
✅ 1/2 cup raw hazelnuts⁠
✅ 1/4 cup raw almonds⁠
✅ 8 x large medjool dates (soaked 10 minutes)⁠
✅ 2 TBS raw cacao powder⁠
✅ Pinch sea salt⁠
📝 Chocolate layer⁠
✅ 1 cup raw cashews (soaked for 4 hours)⁠
✅ 2 scoops @macr0mike Chocolate Hazelnut Almond Protein⁠
✅ 1/2 cup rice malt syrup⁠
✅ 1 cup coconut cream (chilled part from the can)⁠
✅ 1/4 cup melted cacao butter ⁠
✅ 1/4 cup raw cacao powder⁠
✅ 1 tsp vanilla⁠
✅ Pinch salt⁠
📝Topping⁠
✅ 100g vegan chocolate - I used loving_earth ⁠
✅ Chopped hazelnuts⁠
👩‍🍳 Method:⁠
1. Blend your nuts and salt in a food processor until it forms a biscuit crumble. Add your dates and blend until the mixture forms a soft dough. Add a tablespoon of water if required. Transfer your mixture to a mini silicone mould and press down evenly, it should go a 1/3 of the way up the mould.⁠
2. Place in the fridge to set while you make your filling. Place ingredients into a vitamix or a high-speed food processor. Blend the mixture on a high speed until it is smooth and creamy, scraping down the sides of the bowl occasionally.⁠
3. Transfer the mixture into your 6 x moulds, if you have any leftover mixture, you can use this as a topping for your cakes. Place the mixture flat in the freezer and set overnight or for 4 hours until set.⁠
4. When set, pop out of the moulds and top with melted chocolate, extra chocolate mixture, mini chocolate bars and chopped hazelnuts.⁠
5. Allow to thaw for 10 minutes before eating. Enjoy!
