Mingle's Sweet Potato Lasagne

HOLY MOLY GUACAMOLE @trisalexandranutrition you have created one delicious creation here using our Spicy Mexican Seasoning! What a great idea by replacing the lasagne sheets with sweet potato! Winner, winner Mingle dinner!


Mingle Seasoning


  •  2 medium or 1 large sweet potato, sliced into rounds

  • 200g grass-fed beef mince

  • 1 clove garlic, minced

  • 1 tbls mingleseasoning Spicy Mexican

  • 1/2 tin black beans, rinsed & drained

  • 1 corn cob kernels

  • 2 jalapeños, sliced

  • Handful shredded mozzarella cheese



    1. Slice potatoes & toss with 1 tbls extra virgin olive oil, 1 tsp of mingleseasoning Spicy Mexican Seasoning. 

    2. Roast sweet potatoes until golden (air fryer or oven baked at 180 degrees C). 

    3. Brown onion & garlic in a large non-stick pan until golden. 

    4. Add mince & mingleseasoning Spicy Mexican seasoning. Cook until mince is cooked through. Set aside. 

    5. Boil corn cob, then once ready, cut corn kernels & set aside.
      Preheat grill. 

    6. Layer sweet potatoes into a baking tray. 

    7. Top with black beans, mince, corn, tomato, jalapeños & cheese. 

    8. Grill until cheese is melted.
      Serve with a dollop of salsa & yogurt (optional).
