Mingle's Sweet Potato Lasagne

Mingle Seasoning
Ingredients

2 medium or 1 large sweet potato, sliced into rounds

200g grass-fed beef mince

1 clove garlic, minced

1 tbls mingleseasoning Spicy Mexican

1/2 tin black beans, rinsed & drained

1 corn cob kernels
-
2 jalapeños, sliced
-
Handful shredded mozzarella cheese
Directions
METHOD

Slice potatoes & toss with 1 tbls extra virgin olive oil, 1 tsp of mingleseasoning Spicy Mexican Seasoning.

Roast sweet potatoes until golden (air fryer or oven baked at 180 degrees C).

Brown onion & garlic in a large non-stick pan until golden.

Add mince & mingleseasoning Spicy Mexican seasoning. Cook until mince is cooked through. Set aside.

Boil corn cob, then once ready, cut corn kernels & set aside.
Preheat grill. -
Layer sweet potatoes into a baking tray.

Top with black beans, mince, corn, tomato, jalapeños & cheese.

Grill until cheese is melted.
Serve with a dollop of salsa & yogurt (optional).
