Simple Walnut and Ginger Loaf

Perfect for coffee breaks, school lunches, or just because! This warm and comforting loaf combines the earthy crunch of walnuts with the zesty kick of ginger and spices. Ingredients

Cake:

  • 1 cup Naturally Sweet Birch Xylitol
  • 1 cup SweetLeaf Stevia SF Maple Syrup
  • 125g butter
  • 1 ½ cups plain flour
  • 1 cup self-raising flour
  • 1 teaspoon bi-carb soda
  • ½ teaspoon ground cinnamon
  • 2 teaspoons ground ginger
  • ½ teaspoon mixed spice
  • A pinch of salt
  • 2 eggs, lightly beaten
  • 1 cup milk
  • ½ cup chopped walnuts

Icing:

Method

  1. Preheat your oven to 170°C and line a loaf tin with baking paper.
  2. Melt the butter and maple syrup in a small saucepan over low heat, stirring until smooth and combined.
  3. In a large bowl, sift together the flours, bi-carb soda, cinnamon, ginger, mixed spice, and salt. Add the xylitol and mix well.
  4. Stir in the beaten eggs and milk until smooth.
  5. Add the melted butter-syrup mixture, stirring until fully combined. Fold in the chopped walnuts.
  6. Pour the batter into the prepared loaf tin and bake for 50-60 minutes, or until golden brown and a skewer comes out clean.
  7. Allow to cool completely before icing.

Icing:

  1. Mix the icing sugar, softened butter, and lemon juice together until smooth.
  2. Spread the icing over the cooled loaf and decorate with walnuts.
