Tigernut Waffles Recipe

Enjoy a deliciously healthy breakfast with these Tigernut Waffles, made with Power Super Foods Tigernut Flour. These waffles are a great gluten-free option, packed with the natural sweetness of coconut sugar and the rich, creamy texture of coconut milk. The tigernut flour gives these waffles a unique nutty flavor and a slightly crunchy texture, making them a satisfying and nourishing choice for your morning meal. Serve them with a vibrant mix of tropical fruits and a sprinkle of coconut flakes for a burst of flavor and a beautiful presentation.

Ingredients

 

  • 1 cup Power Super Foods Tigernut Flour
  • ½ cup gluten-free baking flour
  • 2 tbsp Power Super Foods Coconut Sugar
  • 2 tbsp coconut oil (melted)
  • ½ cup coconut milk
  • ½ cup water
  • Tropical fruits and coconut flakes, to serve

    Directions

    1. Lightly grease a waffle machine with coconut or olive oil.

    2. In a bowl, combine the tigernut flour, gluten free baking flour and coconut together. Mix well.

    3. Make a well in the flour mix and add the coconut oil and coconut milk. Stir to combine.

    4. Slowly add the water until you have a thick batter, similar to pancakes.

    5. Spoon the mixture into the waffle maker (makes 4 waffles).

    6. Set the waffle iron to a medium heat and cook as per iron instructions. They should be lightly golden and moist in the middle.

    7. Serve immediately, topped with fresh fruit, flaked coconut and your favourite syrup.
