Superfood Bliss Balls with Camu Camu

INGREDIENTS (SERVES 16)

METHOD

  • Place all ingredients except the sweet potato and shredded coconut in a food processor and process until finely chopped.
  • Add the sweet potato and process again until mixture comes together in a ball.
  • Spread shredded coconut over a large plate. Roll spoonful's of mixture into balls and roll in coconut. Refrigerate for 30 minutes or until firm.
