Superfood Bliss Balls with Camu Camu
INGREDIENTS (SERVES 16)
- 1 1/2 cups pitted dates
- 1 cup pecans
- 1/2 cup pumpkin seeds
- 1 cup desiccated coconut
- 1 tablespoon @thehealthyllama Organic Yellow Maca Powder
- 1 tablespoon @thehealthyllama Organic Camu Camu Powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- Pinch of sea salt
- 1 cup cooked sweet potato, mashed
- 1/2 cup shredded coconut for rolling (crushed nuts can also be used)
METHOD
- Place all ingredients except the sweet potato and shredded coconut in a food processor and process until finely chopped.
- Add the sweet potato and process again until mixture comes together in a ball.
- Spread shredded coconut over a large plate. Roll spoonful's of mixture into balls and roll in coconut. Refrigerate for 30 minutes or until firm.
