Superfood Bread & Butter Pudding Recipe

A wholesome twist on a classic dessert! This Superfood Bread & Butter Pudding is loaded with goji berries, goldenberries, and dark chocolate for a nourishing, feel-good treat that’s comforting and delicious.

Ingredients:

  • 14 slices of stale bread, buttered on one side and cut into triangles

  • 2 cups milk

  • ½ cup full-fat Greek yoghurt

  • 5 free-range eggs, lightly whisked

  • 2 heaped tablespoons coconut sugar (plus extra for topping)

  • 2 teaspoons cinnamon

  • 1 teaspoon vanilla extract

  • 90g Well Naturally Chocolate (Creamy Milk or Rich Dark), roughly chopped

  • ⅓ cup goji berries

  • ½ cup goldenberries

 

Instructions:

  1. Preheat your oven to 180°C (356°F). Lightly grease a 20 x 30 cm baking dish with olive oil spray.

  2. In a medium bowl, whisk together the milk, Greek yoghurt, eggs, coconut sugar, cinnamon, and vanilla extract until well combined.

  3. Pour a ladleful of the egg mixture into the prepared baking dish and swirl to coat the bottom evenly.

  4. Arrange a layer of the buttered bread triangles in the dish. Sprinkle with a portion of the goji berries, goldenberries, and chopped chocolate.

  5. Repeat the layering process—bread, berries, and chocolate—until all ingredients are used and the dish is full.

  6. Pour the remaining egg mixture over the top, pressing down gently to ensure the bread absorbs the liquid.

  7. Sprinkle the top with additional coconut sugar for a caramelized finish.

  8. Bake for 30–35 minutes, or until the custard is set and the top is golden brown.

  9. Allow to cool slightly before serving.

This pudding is perfect served warm, perhaps with a dollop of Greek yoghurt or a drizzle of maple syrup. The combination of superfoods and rich chocolate makes it a delightful and health-conscious dessert option.
