Tigernut Carrot Bliss Balls
We’ve used Tigernut Flour instead of oats for grain free high fibre snacking. Tigernuts are small root vegetables or tubers and have a natural sweetness and chewy texture perfect for using in healthy bliss balls. We’ve also added some hormone balancing energising Maca and omega 3 rich Chia Seeds.
Ingredients
- 1 cup Power Super Foods Tigernut Flour (or Flakes) (high fibre for blood sugar balance)
- 1/2 cup walnuts (use pepitas if going nut free)
- 15 Iranian dates (pre soaked for 20min & drained) Use less if using Medjool dates
- 1/4 cup mixed dried fruit Eg Goji Berries, Goldenberries, sultanas
- 1/2 cup freshly grated carrot
- 2 Tbs Power Super Foods Chia Seeds (rich in omega 3 fatty acids)
- 1 Tbs Power Super Foods raw Maca Powder (energising hormone balancing vegetable)
- 1 Tbs brown rice syrup (or honey or maple)
- 1 tsp cinnamon powder
- 1 tsp vanilla powder or paste
- 1/4 desiccated coconut for rolling
Directions

Place all ingredients (except the coconut) into a food processor and blend until it becomes a dough

Form the dough into balls about a tablespoon in size

Roll each ball in the coconut

Cover and refrigerate for a couple of hours to set a little then they are ready to eat
